Exoplanet Observing
Bruce Gary has done a significant amount of work in the development of exoplanet observing for amateurs.  He has published a book and has released his work on a website.  I have printed a copy of the book to increase accessibility and it is linked here
 
 
AAVSO
The American Association of Variable Star Observers is a very vibrant organization of individuals who are doing science with their telescopes.  They have a very well developed program to teach variable star observing.  You can also submit observations through their organization for scientific use.
 
Their initial tutorial is a 10 star visual observing tutorial which will get you started on the basic concepts of variable star observing. To download the tutorial click 10startutorial.
